Ingredients: 4 slices of halibut fillets (170~230g each)
6 cloves of garlic, finely chopped. 1 tablespoon minced ginger, 1 tablespoon chopped fresh coriander leaves, 1 tablespoon coriander root, washed and chopped, plus 1 tablespoon coriander leaves (optional), 3 tablespoons sugar, 1/4 cup Asian fish sauce or soy sauce, ready for more use Spread fish fillets, 3 tablespoons of green wine, Chinese rice wine or dry sherry wine, 3 tablespoons of Asian black sesame oil, plus more sesame oil for coating fish fillets (optional), 1 teaspoon of coarse salt, 1 teaspoon of black pepper pink
Prepare ingredients:
1. When making the marinade, mash the garlic first.
2. Use a spoon to pour the marinade on the fish fillets. Turn the fish fillets several times to completely soak in the marinade. The marinating time is 30-60 minutes.
3. Make marinade: put garlic, ginger, coriander leaves, coriander root (if used) and granulated sugar in a mortar, mash with a pestle (first mash the garlic, then add other seasonings), or use food processing The machine mashes the spices. Then add fish sauce, green wine, sesame oil, salt and pepper. Spoon the marinade on both sides of the fish fillet. Cover the fish fillets with plastic film, and then put them in the refrigerator to marinate for 30-60 minutes, during which time the fish fillets are turned over 1 to 2 times.
Grilled food (Method 1)
1. Use the grilled fish basket: spray oil on the grilled fish basket, or use a paper towel soaked in oil to smear the oil on the grilled fish basket.
2. Put the fish fillets in the grilled fish basket, and then cover the grilled fish basket tightly.
3. Put the grilled fish blue on the grill, and remember to wear grilling gloves when turning. Because the grilled fish basket is very hot at this time.
4. Use grilled fish net: Put the grilled fish net on the oven to preheat, and apply oil before putting the fish fillets.
5. Rinse the fish fillets with cold water, then blot the water dry with paper towels, and put them in a suitable baking tray.
6. Set up the barbecue grill and preset it to high temperature. Before grilling, oil the grilled fish basket or grilled fish net, and then put the fish fillets in the grilled fish basket.
7. Put the fish fillets or grilled fish basket on the hot grilling net and bake for 4-6 minutes on each side. The cooked fish fillets will be brown. The fillets are fragile, so be gentle when turning them. If you place the fish fillets directly on the grilling net, apply oil to the fillets first, and then gently turn the fillets over with a grilling spatula. When testing the maturity, press the fillet with your fingers. If the fillet is completely cooked, it will break when pressed.
Grilled food (Method 2)
1. Use oil-soaked paper towels to carefully oil the grilling net, and place the fish fillets directly on the grilling net for 30-60 minutes.
2. After grilling, apply sesame oil to the fish fillets to make the grilled fish fillets look more attractive.
Other dishes: The above method is also very suitable for grilling tuna fillets, salmon fillets, herring fillets or black bass fillets...thick and suitable for sliced fish are more suitable.
Note:
There are several exotic seasonings in this dish:
l Fish sauce is a Southeast Asian seasoning with a strange taste and similar to soy sauce. It is made from marinated anchovy: Asian black sesame oil is a delicious oil, which is common in Japan and Korea: coriander root is used in Southeast Asia. Used as a seasoning, its taste is somewhere between coriander and parsley root.
l You can use a food processor to stir the ingredients for the marinade. But if you put garlic, sugar, ginger, and coriander in a mortar and mash with a pestle, and then add other seasonings, the marinade will have a more intense flavor.
l Before putting the fish fillets, you must apply oil to the grilled fish basket or grilled fish net. Otherwise, the fish will stick to it.
l No grilled fish basket or grilled fish net does not mean you can't make this dish. You can bake the fish fillets directly on the grilling net, but before putting the fish fillets on the grilling net, be sure to clean the grilling net thoroughly and apply oil-you can apply rapeseed oil or sesame oil.
